ground this morning

Chuck and brisket go through the grinder at six. What isn't used by close doesn't see tomorrow. Here's what happens in between.

  1. Coarse ground beef falling into a stainless tray

    01 grind

    chuck + brisket · 80/20

Chuck for flavor, brisket for fat. Nothing else goes in.

  2. Loosely rolled balls of beef on a lined sheet tray

    02 ball

    4 oz · hand-rolled

Loose. Packed meat steams instead of searing, and you can taste which one you got.

  3. A heavy press bearing down on a patty in a cloud of steam

    03 smash

    450° · 30 seconds

One press, held dead flat until the edges run out thin enough to go lacy.

  4. A spatula lifting a patty with a deep brown lacy crust

    04 crust

    one flip, no more

The browned side is the product. Everything stacked above it is delivery.

  5. Potato buns toasting face down in butter on the flat-top

    05 bun

    potato · buttered · 40 sec

Face down on the same top, in the butter and fat the patty left behind.

Ninety seconds of work, and then it's yours. Get a shake with it — spun to order, and the best thing we make that isn't a burger.

  • The empty counter and stools after close, street dark through the window

    a note from the founder

Marisol opened Munch in April 2002 with fourteen seats and a walk-in that did not work. She still grinds the beef at four and cooks the late shift.

why a shake takes four minutes

There is no soft-serve machine in this building. Frozen custard, a steel cup, a spindle, and ninety seconds per shake. Three at a time, and that is the whole ceiling.

the patio out back is open again

We spent six weeks rebuilding the deck, adding shade, and doubling the seats. It reopens Friday with the full menu and the same late hours.
