why a shake takes four minutes

It is custard, not ice cream — The base has egg yolk in it and runs about 14% butterfat. Ice cream gets whipped full of air on the way to the freezer, sometimes half its volume. Custard does not. That is why a shake from here sits heavy in the cup instead of collapsing into foam by the time you reach the car.

Three spindles, no shortcut — We scoop the custard cold, drop it in a steel cup with whole milk and whatever you ordered, and hang it under a spindle mixer for ninety seconds. One cup per spindle. We own three spindles, so three shakes at a time, and the fourth person waits. On a Friday at midnight that line is real and we are not going to pretend otherwise.

The four minutes — Ninety seconds of spin, plus scooping, plus the wait behind the two orders in front of you. Nobody has figured out how to make it faster without making it worse. A soft-serve machine would hand you a cup in twelve seconds. It would also be pumping something at 22°F that is 45% air, and you would taste the difference immediately.

Malt is a powder — When you order a malt you get a heaping spoon of malted barley powder in the cup before it goes under the spindle. It is not a syrup and it is not a flavor we buy pre-mixed. It tastes like toast, which is the point, and it works on chocolate better than it works on strawberry.

No whipped cream on top — We stopped in 2019. It melted into the shake within a minute, thinned the top inch, and every third person scraped it into the lid anyway. If you want it, ask and we will put it on. Most people do not ask twice.

Order it at the same time as the food — Shakes are made to order and burgers are cooked to order, and the two clocks do not line up. Tell us up front and both land at the counter together. Order the shake after you have eaten and you are back in the ninety-second queue behind everyone else.
